类胡萝卜素
类胡萝卜素（Carotenoid）是一种有机色素，存在天然的植物中，且存在于一些行光合作用的藻类中，此外某些类型的细菌和真菌也拥有这些化合物。目前已知的类胡萝卜素有超过600种。其中可分为两大类，也就是叶黄素与胡萝卜素。
